Sickness struck our house this past week and wreaked havoc on the meal plan. There were a couple days in there where at least one family member just wasn’t eating at all, and I certainly didn’t feel up to preparing food while ill (but did, twice). Everyone seems to be feeling better now so we move on and start fresh this week. Good news is the semester is over so I won’t be teaching any nights this week! Soccer is still in season, but that’s not too difficult for us to accommodate.

Monday: Cobb salad (that we didn’t get to last week)
Tuesday: Roasted Red Pepper and Goat Cheese Alfredo (meatless!)
Wednesday: Philly cheesesteak sloppy joes (inspired by a Taste of Home recipe)
Thursday: Slow Cooker Braised Chicken Thighs with baked potato
Friday: BBQ Baby Back Ribs, Baked potato, green beans
Saturday: Honey Lime Tilapia with Israeli couscous
Sunday: ?? Flex day
