What what, a meal plan?!? Turns out being done with the school semester frees up some time, even if it’s crazy holiday season.

Here’s what we’re having this week!

Sunday: Massaman Curry (I’ve been craving Thai food for awhile…)
Monday: Steaks on the grill with Sweet Potato Gnocchi in brown butter sage sauce (a friend had a huge crop of sweet potatoes this year so we had a gnocchi freezing date)
Tuesday: Lasagna (going with meatless this time, with lots of spinach mixed in the cheese layer, and homemade red sauce), salad
Wednesday: Man-pleasing Chicken (I’ll make extra to use in the soup for Friday) with leftover sides (I’ve got some broccoli and mashed potatoes in the fridge)
Thursday: Honey Lime Tilapia with confetti couscous
Friday: Chicken Noodle Soup with biscuits

PLUS lots of cookie baking this week!! What do you have planned?


It seems I haven’t written a meal plan in a little while.  I do promise we still have been cooking and eating, not sure why I didn’t actually type out my meal plan.  Oh well, here’s what we are having this week, all based around great produce from our local farmers market and meat we have in the freezer:

Monday:  Herb crusted beef roast (our herb garden is doing very well), homemade mac and cheese, sauteed yellow squash, sweet potato rolls (I’ll probably leave off the glaze)

Tuesday:  Steak fajitas with homemade tortillas

Wednesday:  Parmesan herb crusted salmon (based off a kraft recipe, but I make my own breading), quinoa, sauteed swiss chard

Thursday:  Burgers on the grill (I add grated onion and garlic to our patties, along with other seasonings), baked beans, corn on the cob

Friday:  Stuffed Peppers (a favorite from growing up that I’ll try to recreate….my mom used bell peppers stuffed with beef and white rice, cooked in tomato soup….I’ll see if I can recreate it without Campbell’s and using brown rice….wish me luck)

Sorry there’s a lack of linked recipes….this week is apparently all coming from my head….

What are you having this week?

We are ready to get back on track with meal plans!  Last week was craziness (though it does seem like every week has plenty of crazy) because I volunteered to doula for a friend in labor…I did not get as much sleep since her labor seemed to pick up at 2am, and I was with her in the hospital all day on Wednesday (she had a gorgeous baby girl and all are doing great! SO proud of how she did).  After that, I felt pretty exhausted, and a trip to a nurse or two ended with a strained/pulled muscle diagnosis…whatever that muscle is that makes my lung inflate is causing me a ton of pain.  Probably was worse from not getting as much sleep?  Anyway, I need to not let my allergies get out of hand (lots of congestion from allergies and dust, leads to a lot of coughing, leads to pain 😦 ) On the mend and getting more rest now.  Moms never take the time to take care of themselves along the way, right?

Monday: Korean Beef over rice, with veggie on the side

Tuesday:  Crock Pot Roast Chicken, Orzo Pasta with Spinach and Parmesan

Wednesday:  One Pot Wonder Tomato Basil Pasta, with leftover chicken thrown in

Thursday:  Tortellini Bolognese (from the freezer…I made the sauce awhile ago and froze half), salad

Friday:  Baseball game and fireworks!

Saturday:  Filipino Pork Kebabs, with rice and vegetable  (inspired by that recipe, but with some ingredient substitutions)

Sunday:  Homemade Pizza (using Artisan Bread in Five Minutes a Day) and salad.  Probably meatless, but if there’s leftover meat from the week I’ll use that.


We’ve had a lot of meatless meals the past two weeks because when Doug is mid project, it’s nearly impossible to get to the freezer (where all of the meat is found).  Doug’s been complaining about this a bit, but I do feel it is his fault.  What are you having this week?

So I didn’t post a meal plan last week. The holiday of course was partly to blame, but we had a week with quite a few disruptions to the schedule so it wasn’t much excitement as far as dinner was concerned. I did try one new recipe (from America’s Test Kitchen again….I might be addicted to PBS) that caused fights over the tiny amount of leftovers, so expect to see that on here soon!!

Here’s what we are having this week:

Monday: Goat cheese and arugula stuffed chicken breast, steamed broccoli, and homemade garlic bread (thanks for the arugula, Monique!)
Tuesday: Hubby will be gone for work training, but the kids and I will have tomato basil soup topped with leftover bread and fresh mozzarella, inspired by this recipe. Caesar salad to accompany it.
Wednesday: I got some great bell peppers from a local farmer’s market, so these chicken fajitas will be happening again, served on homemade wheat tortillas
Thursday: Pork Tenderloin with Parmesan Garlic Roasted Cauliflower
Friday: Homemade Pizzas (dough from Artisan Bread in Five Minutes a Day, I’ll make small ones and let the kids help with the toppings….probably will be leftover broccoli with garlic and fresh tomatoes….maybe I’ll finally take on some homemade ricotta, too)

For now, the weekend is undecided. What are you having this week?

Happy (belated) Mother’s Day! I spent a lovely morning in bed, while hubby made pancakes and coffee for me (and fed the kids). Not lavish, but relaxing enough for me!

Here is what we are eating this week!

Monday: Spaghetti with Broccoli Cream Pesto, adding in some roasted garlic and tomatoes, plus homemade French bread<—meatless!
Tuesday: Chicken, Artichoke, and Mushroom Lasagna, hopefully with leftover bread
Wednesday: Skillet Chicken Fajitas that I just saw on America’s Test Kitchen the other day….plus homemade tortillas. (Here’s the recipe for the fajitas if you don’t have Cook’s Illustrated: fajitas)
Thursday: Steak with Bourbon Caramelized Onions, baked potato, spinach (we will leave off the blue cheese butter since Doug thought it was a little too much for him)

….and that’s all I have for the week. Friday we are going to Disney, Sunday we have a family cookout, and Saturday will just be a surprise for now. I’m thinking fish of some sort.

Every Sunday evening, I take stock of the fridge and look at my schedule for the week to determine what we will have for dinner. It’s soccer season, and my last full week of work, so three nights this week are going to be a bit crazy. Work nights need to be meals that hubby can handle, as in, take out of the crock pot or stick something in the oven. Anything beyond that and he will give up and order a pizza.

On soccer night, we will get home from practice with two cranky, hungry kiddos so all prep work needs to be done before I leave, and it needs to be thrown together quickly when I get home.

Here’s the plan for this week:

Monday: Pot Roast (we have potatoes and carrots from the co-op that need to get used soon!)
Tuesday: Salmon Fried Rice with baby bok choy
Wednesday: Slow Cooker Barbeque Beef Sandwiches, corn on the cob
Thursday: Beef Bolognese (I can make the sauce before I leave), Caesar salad, homemade garlic bread
Friday: Roast Chicken, Asparagus Risotto
Saturday: Chicken Fajitas (using up leftover homemade tortillas from last week and leftover chicken from Friday)

Sunday:  ??  Leftovers?

We had meatless Sunday (the day I wrote the meal plan).  I print out my meal plan for the week and keep it on the fridge so I can remember to pull things from the freezer to defrost (I just look two days ahead and take out whatever I need from the freezer for that day).
